Oh, and did I mention that you can even switch out the canned peaches for fresh when they’re in season?

The onions in this recipe are perfectly soft, and you get enough sweetness from the peaches to balance the savory chicken flavor.

  • Boneless, skinless chicken breasts. I prefer using skinless chicken breasts as they’re lean and totally devoid of fat. They’ll stay moist, but they’re far healthier than thighs or drumsticks!
  • Extra virgin olive oil. A splash of olive oil adds antioxidants to the mix while providing a very subtle fruity flavor that works well with the peaches.
  • Sweet onion. Any onion technically works here, but sweet onion brings a glorious flavor to the mix. Oh, and make sure it’s finely diced as it’ll blend better with the rest of the ingredients!
  • Sliced peaches in water. Sliced peaches are best for this recipe as they won’t disintegrate as quickly as fresh.
  • Cornstarch. To thicken the mixture and coat the chicken slightly.

How to Make Peach Chicken

  • Step One: Drain peaches and save the liquid. Mix cornstarch with the peach liquid and set aside.

  • Step Two: Heat oil in frying pan over medium high heat. Add onions and sauté for 2 minutes. Add chicken and stir to combine. Cook for 8 to 10 minutes or until chicken is cooked through, stirring occasionally.

  • Step Three: Add peaches to pan and stir to combine. Pour liquid in the pan. Bring to a boil, stirring constantly. Reduce heat to medium low and simmer until liquid has thickened, about 5 minutes. Serve over a bed of rice.

I usually serve this peach chicken over a bed of rice, but you can also serve it with any of the following side dishes.

Recipe Tips and Tricks

  • Don’t go nuts on the portion size. It’s important not to overcrowd your pan, as you want everything to set beautifully. If you’re using a pan that’s small, feel free to cook this recipe in batches!
  • If you’re using fresh peaches, don’t peel them. You’ll get an extra-vibrant look from the skins (and they’re also packed with fiber).
  • Don’t forget to drain the peaches properly before adding them to the pan. Otherwise, you could end up with a seriously watery result!

Variations and Substitutions

  • Although I recommend using canned peaches for ease, feel free to use fresh ones if they’re in season! Just try and make sure they’re yellow peaches as they simply look better.
  • If you’re using fresh peaches, you’ll also want to make sure they’re slightly firm and not overripe. Peaches that are too ripe simply won’t hold up particularly well against the high heat of the skillet.
  • For a hit of freshness, feel free to add a bit of lemon juice or fresh herbs to the mix. They won’t distract from the flavors already there, but they’ll give them a slight boost!
  • For more flavor, feel free to add almonds and pecans to this recipe for extra crunch.
  • To give your chicken a tart flavor, consider adding a splash of balsamic vinegar to the sauce.

Storage Instructions

If you’re not chowing down on this peach chicken straight away (I usually do!), you can store it in an airtight container.

It should stay fresh for up to 4 days, but the peaches will start to disintegrate after that point.

If you need to reheat the dish, pop it in the microwave and heat it up in short increments to stop the peaches going mushy.

Can I Freeze?

You can totally freeze this peach chicken recipe, but it won’t quite be at its best as the peaches might go mushy when thawed.

Simply wait until the dish has cooled and then place your leftover chicken in airtight containers or labeled Ziploc bags.

If I’m being honest, I suggest freezing the chicken and making the peach mix again when you’re ready to eat.
