I honestly can't believe that it is almost Thanksgiving. Where has the time gone? The season of giving is upon us and I have a lot to be thankful for this year. I am a firm believer in using quality ingredients when I bake. The final product is only as good as the ingredients you put into it, right? That means use real butter. Choose real maple syrup instead of 'maple flavored syrup'. Use real McCormick® PureVanillaExtract and choose from the huge selection of McCormick® spices that you can find at Walmart.

The ingredients in this white chocolate truffle recipe are simple and were all found at my local Walmart. The McCormick® spices can be found in the spice isle, however, I found a HUGE holiday display of them at the end of the isle. Tons of high quality spices for holiday baking, cooking, and gift giving! I read a sad article the other day on some major website. It said that we have entered the season of 'unwanted gifts'. I found that sad. No one wants to think their gift is 'unwanted'.   • Cash (with purpose): Handing over twenty dollars can seem kind of crass. But, get creative. Maybe your new teen driver needs car washing supplies and a gas card. Or a new college grad might enjoy a book about investing and a retirement account that you start for them with a small amount of cash. Get creative but think practical.
  • Give the gift of time:Time is short, however, what is REALLY short is the time we have on this earth with our loved ones. Stop rushing and start living in the moment. Try a movie night with teens, a romantic dinner that you cook with your spouse together, or donating time to an elderly relative to help with housework. Time is short so spend it with the ones you love.

How to make homemade truffles

This photo of my daughter helping me make homemade candy a few years ago is one of my favorites. She tackles every year of candy making with enthusiasm. Even when I am not sure I can tackle another holiday chore, she is there to help, to encourage, and (of course) to taste test them all.

So, how do you make these homemade truffles? Here are the basic steps:

  1. Into a double boiler, put the 6 tablespoon heavy cream. Heat over medium heat until warm.
  2. Remove from heat and add the white chocolate to the cream. Stir until the chocolate is melted.
  3. Add in the butter and stir again until that is melted.
  4. Mix in the vanilla and spices until combined.
  5. Chill the filling until you can roll it into a ball (an hour or so). Use a melon baller for easy scooping. Place the centers on a parchment paper lined cookie sheet.
  6. Roll the balls between your palms to smooth them out. If they are too soft to handle, put them back in the fridge for 15 minutes or so.
  7. Melt more white chocolate in a small bowl at 50% power in the microwave. Stir every 30 seconds or so. You can also do this in a double boiler.
  8. Dip the centers into the melted white chocolate using a dipping spoon or teaspoon. Place the dipped centers on a parchment paper lined cookie sheet.
  9. White the chocolate is still warm on the truffles, sprinkle with a combination of turbinado sugar and cinnamon.
  10. Let harden and box as desired or eat them yourself!

It is so easy to get side tracked and overwhelmed during the holidays. There are things to do, gifts of buy, and places to be just about every day. But the next month should be about more than inflatable snowmen and Black Friday deals. Take time to make memories with your kids. Snuggle up with a Christmas movie and your significant other. Savor every moment and remember what you are thankful for. Then, give of yourself... your time, your love, and something made with your own two hands.

This chai spice white chocolate truffle recipe is easy to make! A chai spiced ganache dipped in melted white chocolate and dusted with cinnamon and sugar.

Ingredients

  • FOR THE FILLING
  • 10 ounces high-quality, white-chocolate, chopped
  • 6 tablespoons heavy cream
  • 1 tablespoon butter
  • 1 teaspoon McCormick®PureVanillaExtract
  • ½ teaspoon McCormick®GroundCardamom
  • ½ teaspoon McCormick®GroundGinger
  • 1 teaspoon McCormick®Ground Cinnamon
  • ¼ teaspoon McCormick®GroundCloves
  • ¼ teaspoon McCormick® GroundNutmeg
  • FOR COATING
  • 10 ounces white chocolate
  • 3 tablespoon turbinado sugar
  • 1 teaspoon McCormick®Ground Cinnamon

Instructions
